Low Disaccharide

A savoury biscuit that is almost a scone!

Serves: 12-15

Prep time: 10 mins

Cooking time: 15 mins

Ingredients

  • 2 cups blanched almond meal
  • 2 tsp baking powder (gluten free)
  • 1 tsp mixed herbs, dried
  • ¾ tsp pink salt
  • 2 large eggs
  • 1/3 cup coconut oil, melted

Method

  • Preset oven to 180°C (350°F).
  • Line an oven tray with baking paper.
  • Combine all dry ingredients and mix well.
  • Add wet ingredients and stir well to combine.
  • Scoop spoonfuls of mixture onto prepared baking sheet, forming into scone shapes.
  • Bake for 12-15 minutes, depending on the size of the biscuits, until golden brown.
  • Remove to wire rack to cool.

Notes

These freeze well,  and I find them easy to have stored in pairs in the freezer to grab and run!
