RICH CHOCOLATE MINT BROWNIES by allergy cooking my way

So rich and tasty, its hard to think of them as healthy!

Serves: makes 10-12

Prep time: 15 mins

Cooking time: 40 mins


  • 1 cup steamed and mashed parsnip (about 4 small-medium)
  • 3 eggs
  • 2 tsp vanilla essence
  • 1/4 cup coconut milk
  • 65g chopped dairy and sugar free mint chocolate (plain is fine too)
  • (   I use “Well Naturally” brand, No Sugar dark chocolate, mint crisp.)
  • 1 cup cacao powder
  • 1/4 cup honey
  • 1 tsp baking soda


  • Preset oven to 180°C (350°F).
  • Grease and line a 20cm (9″) baking dish.
  • Place all ingredients into blender except for the baking soda and puree.
  • Stir or pulse in baking soda, and spread mixture into prepared baking dish.
  • Bake in oven for 20-30 minutes, until skewer comes out clean.
  • Remove from dish with baking paper once cooled.
  • Cut into serving size portions.
  • These freeze well.
