Serves: Makes 25 squares

Ingredients
- 1 cup almond butter, (or I blend 260g almonds into paste)
- 1/2 cup honey
- 1 tsp vanilla extract
- 1 1/2 tbsp chia seeds
- 1/3 cup water
- 1 tsp baking soda
- 1/4 tsp salt
- TOPPING
- 3/4 cup cacao powder
- 1/3 cup coconut oil, melted
- 2 tbsp honey, melted
- extra chia seeds or coconut to sprinkle on top
Method
- Preset oven to 180°C (350°F).
- Grease and line a 20 cm (8″) square tin
- Place chia seeds and water into a small jug and mix.
- Refrigerate for 10-15 minutes, until gluey.
- In blender, mix almond butter, honey, vanilla and baking soda until combined.
- Add chia mixture and stir well.
- Pour and spread into prepared dish.
- Bake for 20-25 minutes, remove from oven and cool.
- When cool leave in baking tin and cover with chocolate topping.
- CHOCOLATE TOPPING
- Melt coconut oil and honey in a jug in microwave.
- Stir in cacao and mix well.
- Pour over prepared slice, sprinkle with chia seeds or coconut and refrigerate until cold.
- Cut into squares and store in fridge.
Notes
Sprinkle extra chia seeds or coconut on the chocolate topping before refrigerating.
