Make as sweet or bitter as you like, a great desert or breakfast!

Serves: 4

Prep time: 5 mins

Cooking time: No cooking but refrigeration overnight.


  • 1 x 400g can coconut milk
  • 1 cup water
  • 1/2 cup chia seeds (black or white)
  • 2 1/2 tbsp cacao powder
  • 1 tsp vanilla essence
  • 1/4 cup natvia OR honey
  • 2 pinches salt


  • Put coconut milk in blender, and beat on high speed for 10 seconds.
  • Add water and chia seeds and mix well.
  • Add sweetener (natvia or melted honey), cacao powder, vanilla essence and salt and mix well.
  • Pour into serving dishes and refrigerate overnight.


It takes quite some time for the chia seeds to absorb all the liquid, thus setting the pudding.


Lovely served with my vanilla custard or coconut milk yoghurt, and blueberries.
