Low Disaccharide

Lovely, light little morsels that make a great breakfast or desert served with blueberries, a drizzle of honey and/or a spoon of coconut yoghurt!

Serves: 4-6

Prep time: 5 mins

Cooking time: 10 mins


  • 4 eggs
  • 2 tbsp coconut oil
  • 2 tbsp honey
  • 1 can (440mls) coconut milk
  • 1 tsp vanilla extract
  • 3/4 cup coconut flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • extra coconut oil for frying


  • In mixer, combine eggs, coconut oil and honey.
  • Add coconut milk and  vanilla and combine well.
  • Add coconut flour, baking soda, salt and cinnamon and gently combine.
  • Heat extra coconut oil in frying pan, and drop desertspoons of mixture into hot oil.
  • Fry for about 3-4 minutes on each side, turning carefully to prevent breaking.
  • Serve with blueberries and a drizzle of honey or yoghurt.


Extra mixture can be refrigerated for several days, and used as required.
