Low Disaccharide

Not too sweet, great with a cup of tea!

Serves: 8-10

Prep time: 15 mins

Cooking time: 30 mins


  • 1/2 cup coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 eggs
  • 1/2 cup coconut oil, melted
  • 1/4 cup coconut milk
  • 1/4 cup honey
  • 2 tsp vanilla extract
  • 2 egg whites
  • coconut oil


  • Preset oven to 180°C (350°F).
  • Grease and line a 22cm ( 9″) cake tin
  • In a large bowl, sift coconut flour, baking soda and salt and stand aside.
  • In another bowl, beat eggs, coconut oil, coconut milk, honey and vanilla until frothy.
  • Add wet ingredients to dry ingredients, and mix well.
  • In clean bowl, beat egg whites until soft peaks form.
  • Fold egg white mixture into cake mix.
  • Pour into prepared cake tin and bake 25-30 minutes, until skewer comes out clean when inserted.
  • Cool on wire rack.


This is a dry cake, and it doesn’t rise much, but I enjoy it with my coffee as it is not overly sweet.
