A lovely fresh, juicy salad that will compliment any meal.

Serves: 4

Prep time: 5 mins

Cooking time: Nil


  • 1 cup fresh pineapple, cut into 1.5 cm pieces
  • 3 Lebanese cucumbers, cut into 1.5 cm pieces
  • 1 red capsicum, thinly sliced
  • 1/2 cup spring onions, thinly sliced
  • 1 tbsp mint, chopped
  • 1/2 cup fresh basil, chopped
  • 1 clove garlic, crushed
  • 1 small red chilli, deseeded and minced
  • 1 tbsp coconut amines
  • juice of 1 lime
  • 1 tbsp honey
  • 1 tbsp olive oil


  • In a large bowl, mix all salad ingredients, place on serving plate.
  • To make dressing, place dressing ingredients into blender and pulse to blend.
  • Pour dressing over salad or place in a jug on the side.
  • Refrigerate until used.
