A lovely refreshing salad, great for any cold meat or BBQ lunch or dinner.

Serves: 4-6

Ingredients

  • 1 clove garlic, crushed
  • juice of 1 small lemon
  • 1 tbsp chopped dill
  • 2 tbsp fresh mint,  chopped
  • 1 tbsp parsley, chopped
  • ½-1 tsp salt, pepper
  • 1 cup coconut yoghurt, plain
  • 5-6 Lebanese cucumbers, cut into 1cm cubes
  • 2 tbsp olive oil
  • pomegranate seeds for garnish
  • full mint leaves and dill leaves for garnish

Method

  • In large bowl, combine garlic,  lemon juice, dill, mint, parsley, salt, pepper and yoghurt.
  • Add cucumber and stir to combine.
  • To serve, sprinkle garnishing leaves on top, and pomegranate seeds and drizzle with olive oil.
