A quick salad thats fresh on the palate, and compliments any dish.

Serves: 4-6

Prep time: 15 mins

Cooking time: Nil

Ingredients

 DRESSING

  • 1 tbsp coconut amines
  • 1 tbsp honey
  • 1 tbsp lime (or lemon) juice
  • 3 tbsp extra virgin olive oil
  • 4 spring onions
  • 4 Lebanese cucumbers, finely sliced
  • 4 large tomatoes, cut into thin wedges
  • 1/4 – 1/2 cup fresh basil, chopped
  • salt
  • black pepper, freshly ground

Method

  • I salad bowl, combine dressing ingredients and mix well.
  • Add chopped salad ingredients, salt and pepper and toss well.
  • Best left standing for 10 minutes before  serving, to absorb flavours.

Notes:

A quick and colourful salad to accompany a BBQ in a hurry, or open a tin of fish and add to make a healthy, light lunch.
