This well known dip can be mild, or spiced up a little if preferred. I use green/spring onions as these are low in disaccharides, which some people cannot tolerate. Red onions or brown will work just as well. Corn chips are regularly served with this, although being grain free I enjoy vegetable strips.

Makes: 2 cups

Prep time: 10 Min

Cooking time: Nil

Ingredients

  • 4 spring onions
  • 1/2 cup chopped coriander
  • 1 medium tomato
  • 1 small lemon (or lime)
  • 3 ripe avocados
  • 1/4 teaspoon salt
  • 2-3 shakes black pepper
  • pinch of chill (for spicy)

Method

  • Place spring onion and coriander into blender and chop for a few seconds.
  • Add tomato, and chop for a few more seconds.
  • Add avocado (flesh scooped from skin only) and lemon juice, salt, pepper and chilli (if using).
  • Mix together for a few seconds, or until as smooth as you prefer. This is not usually a smooth paste, so don’t over beat it.
  • Place into serving bowl and serve with vegetable strips or my seed crackers.
