Just a quick marinade, and these tasty legs will delight all!

Serves: 4

Prep time: 10 mins

Marinade time: 30 mins-24 hours

Cooking time: 30-40 mins


  • 6-8 large chicken legs (drumsticks)
  • 1-2 cloves garlic, crushed
  • 1 tbsp fresh ginger, grated
  • 1/4 cup coconut amines
  • 1/4 cup honey


  • Preset oven to 180°C (350°F).
  • Combine all ingredients into flat pan and stir well to combine.
  • Pull skin off chicken, and add to marinade, turning to coat entire leg.
  • Leave covered for anything from 30 minutes to overnight (turn occasionally)
  • When ready, line baking dish with baking paper.
  • Place chicken legs in a single layer on the base and pour marinade over.
  • Bake for 30-40 minutes, turning half way through.
  • Serve with salad, bread or vegetables.


The longer the chicken marinades, the more the flavours penetrate the flesh.

Chicken wings can be substituted for legs, just remove the tips, and reduce the cooking time.
