Perfect meal in an instant, fish with a lemon tang and crispy coconut coating.

Serves: 2

Prep time: 5 mins

Marinade time: 10 mins – 12 hours

Cooking time: 10 mins


  • ¼ cup coconut flour
  • ¼ cup shredded coconut
  • 1 tsp pink salt
  • few shakes pepper
  • 1 egg
  • juice of ½ lemon
  • 2 large Basa fillets (thawed if frozen)
  • 1 tbsp parsley, chopped
  • 1-2 tbsp coconut oil


  • In a flat dish, add lemon, egg and parsley and mix to combine.
  • Soak fish fillets for 5 minutes, turn and repeat. (Can stay in marinade all day).
  • In another bowl combine coconut flour, coconut, salt and pepper and mix well.
  • Heat oil in frying pan on medium heat.
  • Remove fillets of fish from lemon mixture and press into coconut mixture on both sides.
  • Fry for 3-5 minutes on each side, until golden and cooked through.
  • Serve hot with salad, vegetables or potato wedges.
