Tasty fritters, with the chewiness of potato flour, and the tang of kaffir lime leaves.

Serves: 6

Cooking time: 10 mins


  • 2 x 400g cans sweetcorn
  • 150g potato starch
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • 2 eggs, lightly beaten
  • 2 tbsp tamari sauce
  • Juice of 1 lime
  • 4 Kaffir lime leaves
  • ¼ cup fresh coriander leaves, chopped
  • ¼ cup coconut oil, extra if needed


  • Put Kaffir lime leaves into blender and blend until fine.
  • Add 1 can sweetcorn and blend until almost smooth.
  • Blend in all other ingredients except coriander leaves and coconut oil.
  • Stir in coriander leaves lastly.
  • Heat coconut oil in frying pan and fry tablespoonfuls of mixture, flattened down.
  • Fry fritters for 1-2 minutes, turning and repeating for the other side.
  • Serve hot or cold,
