These are lovely tasty little morsels, adapted from some I had in Bali, and made with local ingredients or the ease of a prepared jar.

Serves: 4

Prep time: 10 mins

Cooking time: 5 mins

Ingredients

  • 300g chicken mince
  • 2 tbsp Thai seasoning paste (see note)
  • 2 tbsp desiccated coconut, unsweetened
  • 1 tbsp dextrose powder

• Juice of 1 lime
• 1 tsp pink salt
• 1⁄4 cup coconut oil

Method

• Place all ingredients except coconut oil into blender.
• Blend until almost smooth.
• Wrap spoonfuls of mixture around one end of the bamboo skewer,• spreading about 1⁄3 way up skewer.
• Heat coconut oil to medium high and cook skewers on each side
• untilcooked,afewminutesoneachside.
• Serve with salad and oven fries.

Note

I use Thai seasoning cold blended paste from Australian Woolworths stores.

Alternatively mix lemongrass, ginger, coriander and chilli together
