A mildly spiced chicken dish with vegetables, ready to eat in just 30 minutes.

Ingredients
- 1 lg chicken breast (300g)
- 1 small red onion, diced
- 2 small red chillies, finely sliced
- 1 small red capsicum, thinly sliced
- 100g snow peas (sugar snap peas)
- 100g broccolini, broken into florets
- 1 tsp crushed garlic
- 1 tbsp Chinese 5 spice powder
- 3 tbsp potato flour
- 2 tbsp Tamari sauce
- 1 tbsp water
- ½ cup dextrose powder
- 1 tsp pink salt
- 5 shakes black pepper
- ¼ cup coconut oil
Method
- Cut chicken into 1cm pieces.
- In plastic bag, add chicken, Chinese 5 spice powder, potato flour, salt and pepper.
- Shake bag to mix well.
- In large pan, heat coconut oil until medium hot, and add chicken, chilli and onion.
- Cook stirring, until chicken is cooked through, remove and stand aside.
- In remaining oil in pan, add capsicum, snow peas, broccolini and garlic.
- Stir while cooking, for 7-10 minutes until cooked but not soggy.
- In jug combine Tamari sauce, water and dextrose powder.
- Stir Tamari sauce mix into vegetables and simmer to reduce liquid to half.
- Add chicken and cook, boiling for a few minutes, to heat through.
- Serve on cauliflower rice or creamy mashed potato.
