There’s nothing easier than a quick salad to toss together to complete a meal!

Serves: 4

Ingredients

  • 2 medium tomatoes
  • 2 Lebanese cucumbers
  • 1 ripe avocado
  • ¼ cup fresh coriander, chopped
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp dextrose powder
  • ½ tsp pink salt
  • Few shakes black pepper

Method

  • Cut tomatoes, cucumber and avocado into 1cm size pieces.
  • Combine all ingredients into a bowl, stirring gently.
  • Chill and serve immediately.
