Egg Free

This rich and healthy cheesecake is packed with protein, all raw and ever so healthy

Serves: 6-8

Prep time:15-20 mins

 Soak time:  overnight  soaking of cashews and     figs

Cooking time: Nil

Ingredients

  • ½ cup raw almonds
  • 1 cup dried figs, diced and soaked overnight
  • 2 cups raw cashews, soaked overnight
  • Juice of 1 lemon
  • ½ cup coconut milk
  • ¼ cup rice malt syrup
  • ½ cup protein powder, see note
  • 2 cups frozen blueberries or cherries
  • 2 tbsp dextrose powder

Method

  • Line a 20cm (8″) spring loaded cake tin with baking paper.
  • Drain and squeeze moisture from soaked figs.
  • In blender combine figs and almonds and pulse until sticky.
  • Press evenly onto the base of the prepared pan.
  • Drain the cashews and blend with lemon juice, coconut milk, protein powder and rice malt syrup until smooth and creamy.
  • Pour the blended mixture into the prepared base an smooth evenly.
  • Blend blueberries (or cherries) with dextrose powder until pureed, and spread over cheesecake.
  • Cover and place in freezer for 4 hours.

I use Prana Tribal Force Protein, Choc Cherry Coconut flavour
