Great quick salad that can be whipped up in minutes, and has a lovely tasty dressing.

Serves: 2

Cooking time: Nil


  • 1 large continental cucumber, sliced thinly
  • ½ cup garlic chives, finely sliced
  • ½ cup fresh mint leaves, finely chopped


  • 1 tsp crushed garlic
  • 1 tsp crushed lemongrass (or paste)
  • 2 tbsp mayonnaise (gluten and egg free)
  • 1 tbsp coconut yoghurt, plain
  • 1 tbsp apple cider vinegar
  • 2 tbsp dextrose powder
  • 1 tsp salt
  • few shakes pepper


  • In large bowl mix cucumber, garlic chives and mint leaves.
  • In blender add all dressing ingredients and blend until fairly smooth.
  • Pour dressing over cucumber and stir to combine.
  • Serve chilled.
