Very hard to stop when you start on these crunchy, tasty rosti!

Serves: 4

Cooking time: 10 mins


  • 3 medium potatoes, about 600g, grated
  • 1 small sweet potato, about 200g, grated
  • 1 small red onion, finely diced
  • 1 tbsp smoked paprika
  • 2 tbsp olive oil
  • ½ cup coconut yoghurt, plain
  • 2 tbsp potato starch
  • ¼ cup coconut oil
  • 1 tsp pink salt
  • ¼ tsp black pepper


  • Place grated potato (white and sweet) into centre of a clean tea towel, and roll lengthwise, then twist ends tightly to squeeze out excess water.
  • In large bowl, add potato, sweet potato, onion, smoked paprika, olive oil, yoghurt, potato starch, salt and pepper and mix well.
  • Heat half the coconut oil in a frying pan on medium high, and place a tablespoonful of mixture into pan. Flatten roughly, and repeat with half remaining mixture.
  • Cook 3-5 minutes on each side, and repeat with other half of mixture.
  • Serve hot, with a fried egg and / or sliced avocado on top.


These are great for breakfast, lunch, snack or with fish or chicken as a main meal.
