Just brown the chicken and put everything with it into the slow cooker, to be ready when you get home!

Serves: 4-6

Prep time: 10 mins

Cooking time: 5-6 hrs


  • 3 tbsp coconut oil
  • 8 chicken drumsticks
  • 400g can diced tomatoes
  • 3 cloves garlic, crushed
  • 1 tbsp ground cumin
  • 1 tbsp ground tumeric
  • 1 tbsp curry powder
  • 2 tsp pink salt
  • 2 cups vegetable or chicken stock
  • 1 onion, cut into chunks
  • 1 stalk celery, sliced
  • 3 medium carrots, cut into large rings
  • 2 cheeks green capsicum, sliced thickly
  • 1 tbsp grated ginger
  • ¼ cup fresh coriander, chopped
  • ½ cup dextrose powder, or ¼ cup honey
  • juice of 1 lime
  • 2  tbsp tomato paste


  • In large frying pan, heat oil to medium hot.
  • Add garlic, cumin, tumeric, curry powder and salt and stir for 2 minutes.
  • Add chicken drumsticks and brown, while turning onto each side.
  • In slow cooker add all other ingredients and mix to combine.
  • Add browned chicken drumsticks, cover with lid.
  • Cook in slow cooker on low for 5-6 hours.
  • Serve with cauliflower rice  or creamy mashed potato.
