This roast chicken is so moist and the fig and sweet potato stuffing makes it very tasty.

Serves: 4-6

Prep time: 10 mins

Cooking time: 60 mins


  • 1 x whole chicken, size 12
  • 1 small sweet potato, peeled and diced into 1cm pieces
  • 1 shallot, finely diced
  • 3 dried figs, finely diced
  • 1 stalk celery, thinly sliced
  • ½ cup olive oil
  • handful pink salt
  • ground black pepper


  • Preset oven to 180°C (350°F).
  • Line baking dish with baking paper.
  • Place chicken on board and separate skin from breast. Pour a little olive oil under skin.
  • Combine sweet potato, shallot, figs, celery and ¼ cup olive oil and fill chicken cavity.
  • Rub salt all over chicken, and sprinkle with black pepper.
  • Pour remainder of oil over chicken and place dish in oven and bake for 60 minutes, or until cooked through.
  • Delicious served hot, with roast vegetables.
