This chicken dinner is like chicken and chips, but a healthy version with some vegetables and flavoured with oregano.

Serves: 2

Prep time: 10 mins

Cooking time: 45 mins

Ingredients

  • 2 chicken thighs, thinly sliced
  • 1 large red onion, thinly sliced
  • 2 medium white potatoes, cut into chips
  • 1 cup broccoli florets
  • 1 x 440g can diced tomatoes,(optional see note)
  • 1 tsp pink rock salt
  • 1 tbsp dried oregano
  • Juice of 1 lemon
  • 3 tbsp coconut oil
  • ½ cup frozen peas

Method

  • Heat oven to 200℃, and line oven proof dish with baking paper.
  • Add 2 tbsp oil to baking dish, add potato, onion and broccoli and drizzle 1 tbsp oil over top.
  • Season with salt and oregano and toss.
  • Bake in oven for 30 minutes, stirring if needed.
  • Add chicken strips and lemon juice on top and bake a further 15 minutes, stir.
  • Stir in peas and tomatoes if using, and simmer 3 minutes..
  • Serve hot.

Notes

  • I like mine dry like this, but my kids like the tomatoes in it.
