An easy to make biscuit, that is crunchy and not too sweet.

Makes: 20 biscuits

Prep time: 10 mins

Cooking time: 15 mins


  • 1 cup almond flour
  • ½ cup potato flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 pinches pink salt
  • ½ cup honey or rice malt syrup
  • 2 tsp vanilla extract
  • 1 large egg
  • ¼ cup coconut oil


  • Preheat oven to 180℃, and line baking tray with paper.
  • Beat egg, honey and vanilla in mixer.
  • Add all other ingredients except coconut oil and mix well.
  • Pour coconut oil into dry mixture, and mix into a dough.
  • Drop mixture onto a piece of baking paper, and roll up into a 5cm log.
  • Press firmly, and leave rolled up in freezer for 30 minutes. (can be overnight)
  • Remove paper and cut roll into 0.5cm slices.
  • Place well apart on prepared baking tray.
  • Bake for 15 minutes in oven, reducing heat to 160℃ if browning too quickly.
  • Cool on wire rack.
