Serves: 4

Cooking time: 15-20 mins


  • 1 tbsp coconut oil
  • 1 brown onion, sliced
  • 2 chicken breasts, 1cm slices on angle
  • 1 tbsp chicken stock powder
  • ½ cup coconut yoghurt, plain
  • ¼ cup fresh tarragon, chopped
  • ¼ tsp black pepper
  • ½ cup coconut cream (or milk)


  • Heat coconut oil in frying pan to medium high.
  • Add onion and fry 3 minutes.
  • Add chicken pieces and stir fry until cooked, about 10 minutes.
  • Add all other ingredients and simmer 5 minutes.
  • Serve with cauliflower rice.
