A healthy meal in a cup, just what every little person can handle!

Serves: 4

Cooking time: 15 mins

Ingredients

  • 1 tbsp coconut oil
  • 150g small mushrooms, thinly sliced
  • 100g baby spinach leaves
  • 1 tsp grated ginger
  • 4 large eggs
  • 1 tbsp sesame seeds
  • 1 tsp smoked paprika
  • Fresh coriander to garnish

Method

  • Heat dry frying pan on medium high and add sesame seeds and paprika.
  • Stir and fry until starting to brown.
  • Remove and pour into a dish.
  • Heat oil in pan and add mushrooms, stirring for 3-5 minutes.
  • Add spinach and ginger and 2/3 sesame seeds and fry mixing for 3-5 minutes.
  • In 4  x 1 cup ramekins, or cups,  divide spinach mix into base of each one.
  • Crack an egg on top of each one.
  • Steam in seamer for 10-12 minutes until egg just set (or firm if desired).
  • Serve hot

Notes:

I steamed these in my Thermomix, boiling water in my jug and steaming in the varoma.
