These tasty balls are a lovely healthy treat any time of the day!

Serves: 10-12

Prep time: 15 mins

Cooking time: 15 mins.       (if pumpkin not cooked)

Ingredients

  • 250g butternut pumpkin
  • 150g pecan nuts, chopped
  • 50g chopped pecan nuts extra , or coconut, to roll balls in
  • 1 cup shredded coconut
  • ¼ cup honey or rice malt syrup
  • 1 tbs grated ginger
  • 2 tbsp cacao powder
  • 2 tbsp dextrose powder
  • ½  cup pepitas, chopped
  • pinch salt

Method

  • Peel pumpkin, seed, chop and steam or boil until tender, cool.
  • In blender add pecans, coconut, honey or rice malt syrup, ginger, cacao, salt and pepitas.
  • Blend until almost smooth, then add cooled pumpkin and mix well.
  • Roll mixture into walnut size balls and roll in extra chopped pecans or coconut.
  • Refrigerate until cold.
  • Store in fridge in airtight container, or freeze.
