Low Disaccharide

Too easy, and perfect on my toasted dozen egg bread.

Serves: 1

Prep time: 3 mins

Cooking time: 4 mins


  • oil spray (or dash oil)
  • 2  eggs
  • 2 tbsp water
  • 1 tbsp grated imitation cheese (optional)
  • 1 tbsp coriander or parsley, chopped (optional)


  • Spray microwave proof bowl with oil.
  • Crack both eggs  and water into bowl and whisk.
  • Add imitation cheese and coriander or parsley if using and stir well.
  • Place into microwave oven and cook on MEDIUM for two minutes.
  • Stir and cook on MEDIUM for one minute.
  • Stir and stand for one minute.
  • Serve on toast of choice.


I do most cooking without the microwave, but this is one recipe I love done this way.

Also no dished except the bowl you eat from!!

Hint: always cook eggs on Medium or lower.
