Amazing patties, just enough spice and perfect hot or cold!

Serves: 4-6

Prep time: 15 mins

Cooking time: 20 mins

Ingredients

  • 1 kg chicken mince (or make your own from breasts and thighs)
  • 1/4 lime (skin and all)
  • 3 spring onions
  • 2 cloves garlic
  • 1 tbsp fresh ginger, grated
  • 1 medium zucchini
  • 1 egg
  • 1 tsp salt
  • 6 shakes pepper
  • 1 tbsp Thai green curry paste (made or bought but check additives)
  • 1/4 cup coriander, chopped
  • 2 tbsp coconut oil

Method

  • In food processor add lime, garlic and ginger and blend until fine, scraping sides and repeating when necessary.
  • Add zucchini, and blend until equal to finely grated.
  • Add egg, chicken mince, salt, pepper, curry paste and coriander.
  • Mix until combined.
  • Using wet hands, form patties and fry in heated coconut oil, about 5 minutes on each side until cooked.
  • Serve with salad, vegetables or cauliflower rice.

Notes

This mixture is very sticky, so wetting the hands helps when shaping them. I often dollop mounds into the frying pan, and press with my fingers to shape.
