Very tasty and nutritious breakfast, with several optional extras.

Serves: 2

Prep time: 10mins

Cooking time: 15 mins

Ingredients

  • 1 cup broccoli, finely chopped
  • 1/2 cup red capsicum, diced finely
  • 1-2 tomatoes, diced finely
  • 2 tbsp coconut oil
  • 2 tsp coconut amines syrup
  • Salt and pepper to taste
  • Optional Extras
  • 1 egg
  • 1 small 90g can tuna
  • 1/4-1/2 cup mushrooms, diced finely
  • 1/4 cup ham, diced
  • 1/2 cup spinach leaves, chopped
  • 1/4 cup spring onions, sliced finely

Method

Heat coconut oil in frying pan.
Add broccoli, capsicum and tomatoes and fry 10 minutes while stirring.
Add coconut amines, salt and pepper and cook a further 5 minutes.
If using, add optional extra now, and stir through, cooking a further 5 minutes.
Serve with seed bread
