Low Disaccharide

A delicious combination of flavours, tangy lemon, sweet honey and oregano.

Serves: 4

Prep time: 15 mins

Cooking time: 2-3 mins


  • 1/2 cup olive oil
  • 1 tbsp water
  • juice of 1 lemon
  • 1 tbsp honey
  • 1 small red capsicum, finely diced
  • 2 tbsp oregano, finely chopped
  • 250g button mushrooms, cut into halves
  • 4 cups of baby spinach or lettuce mix


  • In a bowl with a lid, add oil, water, lemon juice, honey, capsicum and oregano.
  • Mix well and then add mushrooms.
  • Cover and refrigerate for several hours or overnight.
  • Heat mixture either in saucepan or in microwave, until heated through.
  • Place lettuce mix in large bowl, and add mushroom mixture. Stir well.
  • Serve as an entree, lunch or it goes well as a side dish with fish
