Fast, easy AND healthy  breakfast, lunch or snack!

Serves: 4

Prep time: 15 mins

Cooking time: 20 mins

Ingredients

  • 2 medium zucchini, grated
  • 3 spring onions, finely chopped
  • 1 tbsp parsley, chopped
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp smoked paprika
  • 1/2 cup coconut flour
  • 2 tbsp coconut oil
  • 2 eggs

Method

  • In medium bowl, combine all ingredients except coconut oil and mix well.
  • In frying pan, heat coconut oil on medium heat.
  • Form 6-8 fritters from mixture and pan fry on both sides, about 7-10 minutes until brown.
  • Serve immediately, or refrigerate and eat cold.

NOTE:

I use my thermomix to grate zucchini, roughly chop and then blend for 4 seconds on speed 5.
