A good potato replacement for any meal. Great for kids!

Serves: 4

Prep time: 10 mins

Cooking time: 10 mins

Ingredients

  • 1 cup creamy mashed cauliflower
  • 1 tsp minced garlic
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp smoked paprika
  • 2 eggs
  • 1/2 cup coconut flour
  • 1/3 cup coconut oil (for frying)

Method

  • Place all ingredients into food processor and blend until combined.
  • Heat coconut oil in frying pan.
  • Spoon tablespoons of mixture into frying pan, flattening down.
  • Cook for 5 minutes on each side, until golden brown.
  • Serve hot as a side dish, ideal with fish or chicken.
  • Kids love them!
