Low Disaccharide

Very tasty, with a lemon tang, and the sweetness of honey coming through.

Makes: 12-15 cookies

Prep time: 5 mins

Cooking time: 7-10 mins

Ingredients

  • • 2 cups almond flour
    • 3 tablespoons coconut oil
    •. 1 heaped tbsp almond butter
    • 3 tbsp honey
  • • 1/2 tsp baking soda
    •. 1/4 tsp salt
    •. 2 tbsp chopped basil or coriander
    •. 1 whole lemon, seeds removed, include peel

Method

  • . Preheat oven to 180’C
    •. Blend all ingredients in mixer until well combined.
    •. Roll tablespoons of mixture into balls, and place on lined oven tray.
    •. Press lightly with a fork to flatten.
    . Bake for 7-10 mins., remove from oven and cool on wire rack.
    . Store in airtight container in fridge.
    •. Cookies can be chewy, or cooked longer for crunchier ones.
