  • 3 medium tomatoes, thinly sliced
  • 1 medium red onion, thinly sliced
  • 2 tbsp coriander, finely sliced
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tbsp honey (or natvia, or sweetener)


  • In a small jug, combine vinegar, oil, honey, salt and pepper and mix well.
  • Layer tomatoes and onions alternately in serving bowl.
  • Pour dressing over the top, and sprinkle with coriander.
  • Serve with any dish on the side.
