Delicious tangy rhubarb with a hint of ginger. Once you start, you won’t be able to stop!

SERVES: 6

Prep time: 10 mins

Cooking time: 10 mins

Ingredients

  • 1 bunch fresh rhubarb
  • 1 cup frozen or fresh blueberries
  • 2 tsp peeled and grated ginger
  • 2 tbsp natvia or honey
  • juice of 1/2 lime or lemon
  • 1 tbsp water

Method

    • Mix all ingredients together in a saucepan.
    • Bring to the boil, and simmer 8-10 mins, stirring frequently.
    • Once rhubarb has started to break up, pour into serving dishes.

    Serve with my coconut yoghurt or vanilla custard.
